Tim Mondavi describes our Napa Valley Fume Blanc as a selection of vineyard personalities that creates a choir of flavors; no vineyard flavor dominates, but each contributes to the wine's complexity. For thevintage, we selected grapes from mid-valley vineyards, primarily from the Stags Leap District, Oakville and Rutherford AVAs (American Viticultural Areas). Sauvignon Blanc is very sensitive to cultivation techniques, and we are able to influence its myriad of flavors in the vineyard with clonal selection, state-of-the-art vertical trellising and canopy management. In our vineyards, we pull leaves to open the vine's canopy for better sunlight exposure on the clusters during ripening. This technique enhances the fruity, rather than herbal, flavors in the grapes to create a beautifully balanced, multi-layered wine.
